Does Magic Immunity work against doom damage? My highly buffed centaurs didn't have much luck against a lair of doom bats.

The two things are mostly unrelated. Magic Immunity nullifies spell damage and grants extra defense/resistance against non-melee, non-spell damage with a realm association. Doom damage is a modifier that disallows defense rolls, and doesn't associate the affected attack with a realm if it wasn't already. If the doom damage comes from a spell, Magic Immunity will cancel it. Otherwise, it will have no effect against it. However, Doom on a Breath attack would negate the extra defense by virtue of disallowing the defense rolls.

Is there any counter-play to Raise Volcano being cast by an AI in your territory?  For me it is the ultimate feel-bad spell, since I don't always know who cast it against me, and I don't know any way to remove it.

If you're watching the bottom right hand corner, you can see who's turn it is.  It will change color when a new AI's turn is happening.  So if you get hit with a spell when that corner button is showing itself Red, it's the Red AI that casts the spell (I'm assuming this is the case).

Only way I've found to remove the Volcano is some nature spells.  Change Terran is the most common one.  I believe some White City Enchantment spells also might protect you from hostile spells targeting their areas (Do not know for sure on this but think I've read it in a spells description somewhere.)

There is no effective counter to Raise Volcano besides Change Terrain. Consecration only stops the volcano from hitting the city tile, not from being cast within the city's land(the 3x3 square around the city generally speaking). Gaia's Blessing can also convert volcanoes I believe.
