Well, granary math is kinda simple: if you want make it optimal - you have to be half way on the food the turn granary done. Like 13/26 at size3 and granary done.
There is some interesting things with overflow food tho. Like you build granary at 23/24. Now your food goes to overflow and granary at the same time.
I've never understood 'avoid growth trick', cause I think this button just stupid and useless in civ. Maybe its me who stupid tho. Never used it.
In short, optimal food is nice, but we need granary anyway. We'll try to sim later to be close to optimal.
For new cities - we should think about prechop granary before 11/22 food, tho. For maximum growth.
EDIT: I dont like to use overflow from Worker, cause we are EXP and as I understand mechanic here - all overflow will shrink, even the Food.
Actually, the 'turn off growth' does have a benefit -- if it helps you get to that halfway food point, then it can be better than just letting the city grow.
For that matter (and this question is also addressed at the lurkers here), does anyone know of a guide that explains the optimal granary build times in comparison to the food bar, and why? From what I know, if we have x/(2x) food in our city bar the turn before our granary is completed, then it's optimal in terms of food saved (but I don't know why). But what about if we had x-1 or x+1 food? Which is better? This is a big Civ4 mystery to me.

Well, I think we should go Sailing after Writing but we'll see.
Usually GS from capital not a good idea, imo. Capital has other things to do, so GS for early Academy is up to city2 or city3. But we'll see.
You forget Agri before Pottery. I know its just a typo.
I'd probably consider Sailing and Math before religious tech and monarchy. But its TBD later.
Our earliest religion possible is CoL and Confu, as I see it. And its like 3% we want to chase it, imo.
We are so fckn behind, and need beakers to catch up. Its too early to say, but I just dont see how we can run for Monotheism.
Sailing not just allow us plant offshore city(s) which improve our commerce with better domestic trade route in every city. It'll allow us profit from open borders with neighbours. And build LightHouse(s), as you said.
A couple of points:
-I would suggest Stonehenge. There's no knowing when (or if ever!) we'll build a barracks in the capital, but we know that Stonehenge will be gone by turn 70.
-We should definitely try and run some sims comparing the speed in getting a GS from the capital versus another city, and observe the possible tradeoffs (e.g. what could the capital be doing in this time?).
-Yes, Agriculture before Pottery
-Yeah, I'm a little undecided between getting Mathematics or Monarchy as our first Classical tech. I'm hoping that these can be our first two Classical techs either way.
Also, we definitely need to understand the shape of the southern coast before we decide on where to place Sailing in our tech path.
