Indeed about the snowball, this game is all about it.
My advice would be to replay your sandbox (or just start some SP maps in immortal - random leaders, continents or pangea, barbies on -, not deity since it's too early and u won't learn from it) and play the first 60 turns over and over. Till you can match the AI rex (well roughly) and tech speed.
You need to improve early rex (earlier settler/workers while having sufficient defenses) and eco build up. Tech path/use of key civics (slavery) are a big part of it.

edit: if you feel depressed at immortal, start in monarch or emperor. Below is too much forgiving, you won't learn anything if you can get away with big mistakes.
It's a good idea but I would never think about Immortal level. I am really amazed about the consequences of small details: getting one or more coins per turn, saving a turn by whipping, etc. Indeed it is a different way of playing against IA in Prince or Monarch, which I ve been playing.
One thing that I find particular it is that, in my opinion, the start conditions (bonuses) in human games are a little better than with the AI generated maps. Well in this last case it is very ramdom what you get.
I guess that in 5-6 turns this game is over. Now I have spears againts Knights.
