Thanks for the compliments. Here's another first (of course, bear in mind that only means I have never seen anything like it before (as much as I pay attention to such things))
One on the right is a basic cut that works with layered vegetables such as celery and all variety of onions. The one on the right is the same only with a different treatment to the inner sticks - The curls. Celery curls are easy and quick to make and compliments other garnishes well. See the carrot and radish flower plate for an expample.
