No offense, Civ IV is not that bold a pick... Baba Yetu clearly makes it a great soundtrack.
Toe Jam & Earl! I appreciate that being on the list, I would not have thought of it, but immediately was taken back thinking of it.
For me, there is one game soundtrack that stands above the rest... GTA Vice City. 80s-tastic! I could almost play that game just to drive around listening to the music...
You can get a look at a t-bone by looking up the bulls ass but I'd rather take the butcher's word for it.

There's a lot of others, actually. Sonic 2, Zelda (big battle between Ocarina of Time and Majora's Mask), Chrono Trigger... These have some songs that I still remember very well and I feel nostalgic about.
This is a brazilian band playing a version of Toe Jam and Earl's soundtrack. It's not the original, but it's very nice. I'll post some links to the original music later, because I can't look for them while at work (I already knew this video from another time):

Another awesome soundtrack is from Earthworm Jim for the Sega Genesis/Mega Drive. This one, specially, is awesome:

I'll never be able to mention just one, I grew up with a C64 and later Amiga and there are soooo many soundtracks from those two platforms that are stunning! Here are a few of them:

I listen to C64 remixes a lot. Here are some I absolutely adore.
Meet musical GENIUS Reyn Ouwehand playing Martin Galway's "Green Beret" using a synthesizer, drums, guitar, and a sequence looper, Mike Oldfield-style - live! Absolutely epic.
Then Rob Hubbard's "International Karate" has already been mentioned. Watch this amazing a capella version live on stage by the swedish band Visa Röster.
And finally, a funny boyband-style version of Martin Galway's "Comic Bakery" by Press Play on Tape.
...which brings me to my all-time favorite computer game music, the original Martin Galway's "Comic Bakery". Caution, bleepy SID-sound ahead! I didn't like the game, but listened to the music endlessly. Still do. Driving the wife mad by whistling it all the time, too. :D

Its interesting that most of the games linked are older. Some recent games have decent soundtracks, the Mass Effect franchise comes to mind.
I had severe Amiga envy; my parents invested in an Apple 2e and I was unable to talk them into upgrading after just a few years  .
