If we start with NA or Dutch and go BW first, start 1 can go worker first and then immediately chop a workboat in the capital to start working that fish as quickly as possible.
Not a huge fan of NA though and Dutch is worthless on a non-water map so I would much rather get something like Egypt, but it's something to consider.

HHHHH taking Korea evidently means they had their eyes on Maya, since they have the same Mining/Myst starting techs. They're all set for early SH now getting Myst.
LAM have gone for a obvious power pairing of Darius/HRE, but unless they take China they'll have terrible starting techs and even if they do then they'll still start with Hunting instead of Wheel. China isn't that great anyway of a civ anyway, but they pretty much have to take it.
Kinda interesting everyone else chose a civ before their 2nd leader. Guess everyone would prefer making pairings one at a time?
Civ Predictions:
Smack - England
HHHHH - whichever of Otto's/Egypt we don't pick, at the very least a Agri/Wheel civ
LAM - China
No idea about the leaders yet though. Just hoping Gandhi will still be available for us.

Well looks like I got that one wrong. With England chosen, LAM have Mysticism/Mining/Hunting/Fishing, not the best starting techs since they're missing Agriculture and Wheel but England is a solid choice otherwise. I'm curious to see what Smack will take as their 2nd civ, since there aren't really any good Mining civs left.
Just one more pick to go.

Too much fixation on starting techs IMO.
So, Ottoman's or Egypt? (or heck, maybe even France for the lulz)

France would be a ton of fun, but I think the Ottomans or Egypt are probably the best here.

OK so which one of the two do you prefer?
I slightly prefer Egypt since I haven't played them before and there's a slight synergy with Gandhi's PHI and their usually underwhelming UB, but both are excellent choices regardless for civ no.8.

Good call on taking Maya with the second pick.
Also what I'm thinking everyone is fixated on is the fishing start. Which I guess has some merit since, like I said before, Fishing+Mining lets you chop a work boat in your capital immediately if you run BW first.
As for Civ pick, I'm leaning Egypt. Gandhi could take advantage of obelisks to get an early priest to bulb a religion. Heck, if you settle him you've more or less completely solved the whole maintenance issue in the early game. Also War Chariots are amazing.
EDIT - Picks happened so quickly I didn't even realize we already picked Gandhi
