At size 2, working corn/cow, your food count is +6. That's exactly one Sulla Minimum, but not a good total for a capital. You need more food for whips in particular, where 1f becomes ~2h after granary. Even if you don't want to whip much, you need farms for working those riverside grass hills and for growing onto cottages.
And really, "forever" just meant the next ~40 turns. By then you'll specialize your capital as a cottage haven or a production powerhouse with watermills. After that, any farms will get paved over as needed.
Roads and special tiles are more important, but as workers get spare turns (or travel 3 tiles down a road toward far away cities) it's something that's worth doing.

I'm no sandboxing expert, but I was poking around in WB for my PB9 sandbox and noticed that in "Edit City" mode there is an option to choose religions present in a city. That same section (I think if you scroll down) also has Holy Cities. You can delete the holy city from the AI and give it to yourself in the correct city once you research the relevant tech. You may also have to adjust the culture to match ... I can't remember if you're supposed to get culture on the turn you found a religion or not.

I see on civstats that you're still playing the turns, have you decided that reporting takes too much time? (Which is a completely rational decision, by the way.)

Careful playing double turns like that. I know it's way convenient, especially when you're busy, but it's not a good habit. It's only really a problem during and immediately before a war... but you don't always know when someone is lining up for a war.

Yeah, there are times where if I think my neighbor is even acting hostile towards me (not necessarily a DOW incoming, but settler race, etc) then I don't double turns just in case it causes an issue.
