This is a little late, but I remember this being one of my favorite meals as a kid. I went back and found a recipe that was close to what I remember my mom making. Side benefit is it's pretty cheap and easy to do:
Cream of Tuna
2 tablespoons butter
2 tablespoons flour
1 1/2 cups milk
1 can tuna, drained
1/2 cup grated cheddar cheese
Melt butter in a small saucepan over medium heat. Stir in flour until smooth. Add milk slowly, stirring in constantly. Bring mixture to a boil and stir until thickened, 5-10 minutes. Reduce heat to low, add tuna and cheddar, mixing until melted. Salt and pepper to taste.
As a kid, we would have this over rice. I've heard of people having it on toast as well.
