Buffing (being one of the few ways of "doomstacking") is a very powerful strategy, so it is intended to have weaknesses and has tools to work around that weakness implemented as well.
Undispelable buffs exists in the game anyway, they're called artifacts and are more expensive than the normal spells for a reason.
Only Sorcery can dispel more than one unit at a time and regular Dispel Magic is way too expensive to stop a buffed army, at best it can slow it down and make the battles cost you - but so can spells that damage or kill units so it's not very different from that.
