I looked into it a little bit more (calculating, not simming, but based on real assumptions instead of guesstimates) and it looks worse for the Knights than I described, though still not catastrophic: It looks like ten cats against a stack like the one you described would leave 8-9 Knights unscratched on average (expected range is something like 4-13) plus a basically random number of pikes/xbows (the total number of those in the fight is so small, any result is within reasonable error). The majority of the rest will have taken just one hit though. I was surprised to find that promotions make very little difference in this case, though of course they make a big difference for defending against any hitters that come in after the cats.
