One of the major changes in CtH is the ability to build workboats without fishing. You still need it to work the tiles though.

So how important is it to pick immediately useful techs? Can't I just research hunting/fishing in time for worker/boat production?
Would Mongols with CHA and FIN be good enough? Hunting and the Wheel starting techs.

This is something you should test yourself. Or calculate. For instance, Hunting has a base cost of 40 beakers. Due to the combination of difficulty and map size this is multiplied by a bit less than 1.5 and comes to 59 beakers. This multiplier is the same for all techs. You can plan out in a test game, your head or with a spreadsheet when you need/want relevant worker techs. It doesn't have to be super precise at this stage.

I'm thinking I could start with two fishing boats, a worker, and only then archers/settlers. Is that too greedy? How long in MP till you need a garrison in your cap?

Well there’s no rule stipulating that you can’t walk your first warrior into your neighbor’s capital, but note that in CtH all civs start with scouts.

Ancient era aggression is generally uncommon, but I’ve seen firsthand examples where people lose second cities to warriors or die outright to war chariots.

In an emergency, your capital can build a warrior in 3 turns, and later on people will sometimes keep partially built units in the queue to whip if needed, since you typically want to avoid whipping from scratch at the 50% penalty.

I don't know about greedy or not, but I'd suggest trying out a couple of different openings to see which you like best or is fastest. Two fishing boats or one or a worker or what have you. Two fishing boat openings have been unpopular recently.

you ususally want a few warriors, don't tech archery early. Warriors are very cheap military police.
