Perhaps coordinating pikemen/footmen could hold the center of the board. Haven't tried it yet, sounds fun.
I guess what I am saying is that once the Cav/Elephants get behind enemy lines (behind that wall of pikemen/footmen) its pretty much over for the opponents
(unless the've got some good backline defenses, I suppose)
EDIT: now that I think about it, a couple archers in the front 1 or 2 lines could really work to prevent a wall of pikemen/footmen from controlling the center of the map.
DBLEDIT: perhaps a lot of the game, like stratego, is to attempt to analyze what your opponent is likely to do (before the game begins). And then buy an army that will counter the majority of their likely choices.
of course, there are no 'hard counters' per se, but every little bit helps.
