Actually, I think I need to ask a question here as well (having tried to look up what I thought I needed to know).
Given the obsession of the scout with speed of movement, I figured I need to find out how much it matters what weight I'm carrying and then ask if the mule can come along or not. And figure out what speed a mule walks and how much it can carry before it slows down.
I have a vague recollection that you said you were only bothering with that level of detail if it was story relevant - so I guess the questions for here are: Is this one of the story relevant moments? Does a medium load mean I need to do something about that*?

*i.e. I've looked it up, and I see that the rules say it slows you down. But I don't know if that's something that should make me worry or something that's just the way it is.

A mule or horse can definitely keep up, even at Medium load. A person at Medium or Heavy without a mount may cause some friction. Or, more likely, would be asked to make constitution checks to keep up, and maybe become Fatigued/Exhausted.
The Scout is intending to move at a pace of 30ft, and possibly to force-march for an hour or two on top.
Unless you guys have a lot more gear than I think, it's just people in medium or heavy armor that might be an issue.

Mara has a strength of 11, and the spreadsheet tells me that a light load is 38lb or less. Light armour plus weapons (rapier, crossbow & crossbow bolts) plus cold weather clothes come to 43lb

OK, done some re-org with stats (strength is now 13, con & wis dropped a point a piece) and gear (including putting all her food and some of her ammo on the mule, which makes me twitch but it is what it is, wish I'd stuck with a fighter  ). And now she's at 50lb so squeaks into a light load. *phew*
fake edit: About to cross-post. If I don't have to count the weight of clothes I can put some of her food back in her pack and that'll make me fret less  I may be able to change some of her stats back as well, will have to look.

I think all rations are 1 lb a day, and I have 21 extra lbs I can carry in my backpack alone.
(thats a week of rations for 3 extra people)

Light Armour + Weapon + 2 weeks Food comes to ~10str light load capacity, without even counting sleeping / other survival gear.

The Adventurer's Guild does also rent mules, 2 sp/week. Or you could push back on the pace he wants, maybe talk him into moving more cautiously.
