Well... I suppose it would depend on the game, but in Guild Wars for example the players will form into groups of eight called a "party" and when the hits something unexpectedly nasty you can get a "wipe".

A party wipe is when the team gets completely wiped out and might have to restart.

A near party wipe is when most of the party gets wiped out, but one or two survivors escape and can come back and resurrect the other fallen party members.

As per the quote at the top of the page, Sirian was referring to the knights in dlvl13-16 of Diablo 1. Presumably called cans because they are basically empty suits of armour. Black Knights in particular would be considered 'easy cans' compared to other kinds of knights because they are more vulnerable to certain kinds of damage (electricity, IIRC) and are overall slightly weaker than most of the other kinds of opponents typically encountered on those dungeon levels.
