What are everyone's thoughts? Do we want to limit it to the basic expanded options like "Declare war on X", "Make peace with X", "Close borders with X"...the same sort of diplomacy you would get in an SP game?
Or do we want to add in more freedom, like the ability to make a NAP or Alliance, or more flexible trades like "I'll give you 300 gold in exchange for letting me settle a city on spot X"?

Agreed. If you accept a deal, you should abide by the terms, and the lurkers can enforce that. Of course, I would say that you're only required to abide by them for 10 turns (just like any treaty) unless another time frame is specifically agreed upon. "I'm offering you 10gpt to declare war on X for at least 20 turns."

Declare war on X
Stop trading with X
Revolt to Y
Make peace with X
...those alone make a pretty big difference.

Tempted to play, PB9 was my favorite. Just dunno if I'll have time when school starts next fall.

Casual is why I liked mods like NoScore when they were popular.
If the data isn't even there, you can't spend hours analyzing how many lakes and forests the other player got, or what mix of troops and buildings lead to exactly 121,416 soldier points, or who went on a whipping frenzy last turn, or who finished a wonder in a faraway land, or is trying for an almost-unheard-of MP culture victory.
Which leaves your own micro.

Well, the idea is that you won't have to spend hours taking your turn most of the time, and certainly not a huge amount of time outside of playing the actual game, so I'd say if you could dedicate 15-30 minutes per day, that would be enough to play.

That's actually an interesting idea. I didn't even know such a thing existed. Did you still get graphs, though, even if not detailed data?

Noscore v2 sets everyones score to 1 (IIRC it changes to 2 when you hit FutureTech) for the entire game.
It also completely disables the demographics screen.
(This version also has some knowntechbonus changes, which could be removed easily)
A bunch of games have been played using it (or an earlier version which still gave points for wonders) on CFC and TG (and maybe other places). Works well.
You can still get graphs with EP spending. The score graph looks funny of course, but the rest are fine.
Of course if you want to figure out your own power by hand, and then get out a ruler and measure the other guy's graph, you can get a rough idea of where he stands.
If you don't want to give up that info, spend more on EPs...

I always loved playing by the seat of my pants. The only real planning I do is simming out battles (which I assume everyone does). I'd like to throw down in this.

Adrian hasn't fully confirmed whether he wants to join, and Borsche said he wouldn't be available for a few weeks, so if we want to start sooner we'll need at least 2.
