Well, it depends on the actual in-game state.
Strategically, the game is very much in Final War mode now, so Sullla should abandon all ideas of empire development and simply crank out units. Finish the muskets to gain a military edge and get the second GG, but otherwise it's all military all the time now, together with only war civics.
Operationally, Sullla has two fronts, one against Yuris (fresh) and one against teh (mostly gassed). Most of his army is off dealing with teh, and out of position for dealing with the Yuris. He also has some operational depth with the cities of Mainz and Frankfurt, which are mostly useless for him (or Yuris).
Sullla is also in a far better position to replace units than Yuris or teh, if he bothers to quit building infrastructure. But on the other hand, his legions have value since they can be upgraded once muskets are in hand.
So I'd think of holding a delaying defence at Frankfurt. The city will be lost, but make Yuris work at taking it. Don't bother about Mainz defending Mainz at all, but focus on defending Aquilae and Arpinum.
The opposite matters against teh - focus on taking his remaining cities ASAP, even at the cost of units. It's more important to get the army back towards Cologne quickly than having an extra unit. Once that has been done, Sullla likely has enough units to do a three-pronged offensive against Yuris, meaning one prong (likely the one out of Arpinum) will be able to get past Yuris main army and into his core.

I think you guys are overestimating what Yuris's knights can do to Sullla. I don't expect him to lose a single city. I'll actually be surprised if he loses a single unit.

A lot will depend how many units he have in the area around Aquilea and Arpinum, yes. But Sullla will lose units, he lost several against teh already, and right now Yuris is more advanced in military than teh. There is also the issue of having to work on two different fronts in the same turn; at least I end up missing stuff when having to do that.

Yuris could take either Mainz or Frankfurt in 2 turns. He would lose 2-3 units taking Mainz and maybe 1 taking Frankfurt. Those knights have 50 strength and would do 36-61 damage to Frankfurt. If he got really lucky, Frankfurt could fall in one turn. If Sulla had put his knight in Frankfurt the damage would have been reduced by 1/3.
Since the cities have not been ceded by Teh, if Yuris captures them before Sulla finishes off Teh then Yuris will own them without occupation penalties. If Sulla then recaptures them they will have occupation penalties for him.
The time is short though, since Sulla can easily take both of Teh's cities in 2-3 turns if he sends his knight and one legion to Ulm and the rest to Aachen. After that Yuris would just end up with bunch of damaged units and two useless cities.

Agreed. I think Sulla was expecting a concession so much he assumed it didn't matter what he built in his core (a campus in Ravenna? chop a knight or legion). Sulla could finish off Teh, heal, upgrade to muskets, and sail over to Yuris' capital to end the game. Then the fighting in the middle doesn't really matter.
I don't know if Sulla will take that risk. He doesn't know what is over there and hasn't been planning it for 80 turns. On the other hand I didn't expect him to realize he could sweep through Teh's lands so easily either.

I've just noticed that is PBEM will finish before the Civ5 one.  I feel that the only plausible way to prevent Yuris from learning the true state of the Civ5 PBEM game is to tell him not to read anything...

I do actually want to applaud Yuris for not just conceding and going out fighting.
Still, crikey, just look at the science and culture production numbers in Yuris's screenshot compared to Sullla's. The clock is seconds from midnight at this point.
This is also a very minor nitpick, but regarding Yuris's screenshot, I'm curious why he's researching Theology. I don't really feel like I can ask without being leading though.
