Today's mushroom day, so two recipes.
Mushrooms and sour cream - eat as a garnish to your favorite grains, pasta, or anything really. 900g mushrooms (that's what I used today). Porcini, cremini, any generic mushrooms really. 1 large onion. Stay away from sweet or red in this recipe. You already get a lot of sweetness out of the sauce and the browning of the onion. Sunflower Oil - enough to coat the pan well. Butter - about half as much as the sunflower oil. Add Sunflower Oil/Butter to pan, get it hot enough for the butter to bubble but not brown. Add the finely chopped onion, and cook on medium heat till translucent. Before the onion has begun to brown, add in the mushrooms, chopped into strips, but not too finely. Keep the heat on medium (maybe a bit above that, like a 6/10 setting) and DO NOT cover with a lid. You want the liquid to escape and the mushrooms to have a bit of a chance to brown themselves. Once the liquid from the mushrooms is gone and they've begun to fry a bit, you want to add Marsala wine to taste. Don't drown the mushrooms, 100 mL should be enough (1/2 cup or so). Once the wine is absorbed into the mix, start adding sour cream, to taste. Make sure to add the more liquidy parts of the sour cream as well, this is your chance to use that. I usually use about 200-250g of Daisy sour cream (half the cylinder). Mix very thoroughly on medium heat and add spices. Do not spare black pepper, you want to add a few pinches of nutmeg, salt to taste usually about 1 teaspoon for me, but I do not like salt. Add a bay leaf on top, some dried parsley and fresh dill. Thyme works too, but I do not like to use rosemary. If you want, add the stems of the dill too, they will add acidity, I typically add them finely chopped, they add a bit of crunch that way, but make sure you add them first, they'll need a bit of time with the heat. Add a bit of lemon juice if you want a bit more acidity, but I usually do not find it necessary. Depends on the sour cream. Simmer this for about 5-10 minutes on low heat with lid on. Remove bay leaf once done. Recipe 2, Mushroom Soup: 2+2 Carrots 1 Onion 2 Potatoes 200g mushrooms Barley ??? - I prefer a lot, but some people like the plain soup without anything in it. Boil the barley in water for 20 minutes. Rinse, set aside. This is not enough to cook it through, it usually takes like 45 minutes. In a large pot, with cold water, throw in 2 chopped potatoes, and then bring to boil. Add sauteed carrots and onion (sautee only half of the carrots), 2 chopped carrots, the barley, and the mushrooms, along with whatever are your preferred soup spices and additions. For me, that's a lot of dill, a lot of parsley, and a bit of vegeta all purpose salt. Maybe a third of a bouillon cube. Cook on low heat until you get a really rich "umami" soup.

I'm having this for dinner tonight, though since I forgot to thaw the lamb chops (and they're about 2 inches or so thick) I'm cooking them to medium rare using sous vide and then searing them in the pan.

I've been making this for years with decent results. * The "Masochist" aspect comes from adding several hot peppers and 1 tbsp of ultra-hot sauce (I prefer this one). Feel free to skip if you don't want hair on your chest, but you may want to increase the garlic content and/or add some combination of cheese and cilantro to make up for the missing flavor. * Makes enough to serve 1 or 2 as a full dinner, or about 4 - 6 portions if using as a side dish. Goes great with fried chicken. * Seriously, don't forget to rinse that rice. I didn't wash it enough once before, and it didn't bake correctly at all; rice wouldn't absorb fully, and it ended up being a waste.
