Duck is an option, I'm sure some species are endangered.
Water, because of water scarcity? This makes the most sense to me of the non-animal words.
Tag, endangered species are often tagged to track them.
Trunk is also another elephant reference. I guess Tail could be too, but who poaches elephants for their tails?
Those are my top picks; however, if we were to consider simply anything involving dangerous situations to be applicable for the clue, I'm also okay with Bond and Pirate.

Well, we're all over the place, which isn't too surprising given that our clue points to most words on the board to various degrees. Let's knock out one each of the animal & non-fauna words, which we've all considered; we're in trouble if we get one of these wrong: Point to Ivory

PYRAMID - built by polytheists in Egypt, Maya, etc.
SATURN - name of a Roman god
HIMALAYAS - sacred in Hinduism, Buddhism, probably other Eastern religions
Nothing else stands out.
The clue is Polytheistic, rather than Polytheist or Polytheism, but I cannot see that it makes a difference.
