As for picking..... I went Chm/Fi and Cre/Org in 61 and 63. Would like to do Chm-Imp this time.
Thoughts on the Dog Soldier and Numidian Cavalry?

Never really tried the Dog Soldiers, but I don't think they pass the smell test. Numidians are famously countered by horsemen, but I believe they can be made to work.

Cyrus can be very powerful in the start, but you need to turn that into a lasting advantage.

Out of these I will definitely pick Incas, not sure on leader though - Joao or Pacal? Probably Joao.

Do you want to double up on the discounted granaries? In my mind I thought the whole purpose of Inca was that it let you skip the expansive trait by already helping with cheaper granaries and the fresh water bonus for city health.

Thoughts on the other picks:

Fi-Org Byzantines - double lategame-oriented income bonus traits heading towards cataphracts, very strong if earlygame is not interfered with
Pro-Imp Americans - imp and pro are nice, found more cities with less economic penalty because of the immediate trade route bonus. Doesn't seem too special though
Cre-Pro Zulu - four convenient early things with two traits and a UU and a UB
Exp-Org India - buffed workers and cheap granaries
Phi-Cre Arabia - madrassa and phi is interesting combo

of these the cataphract thing is the most scary
