Corn can show up in the desert SW of Great Plains, too. (Ever heard of the Hopi?)
Corn DOES show graphics in the desert, by the way. It's just a few stalks, though, and perhaps there are some lower graphical settings where it won't show anything? I'm not positive.
It can also be ungodly difficult to detect Wheat in the jungle.
(Why is that relevant? Well... Wait and see.)
See, the graphics work like this. Plots that have more total food in them will show more of the plants. A Corn in the desert is in a 0 food tile, and has 1f with the Corn there, so it only shows 1f worth of corn stalks. After you farm it, more food is in the plot, so it shows more stalks. Corn on Plains will show more stalks than on Desert but less than on Grass. Corn on Flood Plains will show even more stalks.
If you are playing Oasis, then just know that it helps to flick on the resource bubbles at some point. Even if you can see the few Corn Stalks on a desert plot, the resource bubbles will make it even easier for you.
