Fewer memory sticks lets you upgrade easier as stated, but more memory sticks gives you less loss if a stick fails (which has never happened to me but friends have mentioned it). RAM is ridiculously cheap right now compared to a couple years ago so I'd definitely get at least 8 GB.
Oh and Sandy Bridge isn't locked to 1333 speeds. Many motherboards support faster, possibly with some configuration.

8gigs is more than enough, don't bother with 16.
Don't worry about memory failing, if it does spend $15 on a new stick
Like with Windows Ultimate you'll know if you need a 2600K. It's only useful for Hyperthreading, which in an era when midrange processors already have four physical cores means a pretty small group.
Don't worry about memory speed. Any standard stuff is fine. We're talking like a 1% speed difference here in real-world applications.
Speaking of the real-world, I'll reiterate that upgrading to even an 80gig SSD and using that for Windows and games will be the best bang for the buck upgrade you ever did. My hope PC has a SSD and my work computers don't, and the latter feel broken. There's something magical about never having to wait for something to finish loading before opening something else.
All that said, you should be happy overall with what you spec'd out. It should meet your needs fine. Enjoy the case!
PS - Yes, Cyberpower and iBuypower have been clones for years.

- There are Ivy Bridge (a better Sandy Bridge) about to start selling really soon.
- If you don't overclock, the models with -K are not needed.

My impression from Ivy Bridge (or for that matter Sandy Brigde) is that they are mostly improvements in power efficiency and in integrated graphics. An old 2009-vintage Core 2 Duo is still a quite capable CPU, and can easily handle most tasks in a desktop.

I would ignore IB for now, maybe even wait a little bit to get a SB for cheaper.

I wouldn't say Sandy Bridge was mostly improvements in power efficiency and in integrated graphics...
But yeah Ivy Bridge is probably not going to be that much of an improvement, especially in the beginning before the manufacturing process has matured.

Ivy Bridge is cooler + lower power, and very slightly quicker. For those that care about these things (not Ruff), it seems like a much worse overclocker.

That depends on what you do on your computer. I don't regret one bit that I went with 16 GB. RAM is cheap, buy a lot of it while it still is.
