Escape Velocity, Escape Velocity Override and Escape Velocity Nova. Played the first two on my father's Mac when I was a kid, bought the third for PC about six years ago. Frequently described as "Looks like Asteroids, plays like Elite", they were wonderful space shooter games combining exploration, empire-building, 2-D dog-fighting, commodities trading and Rougelike & RPG elements with an amazing degree of player freedom. Sadly the publisher Ambrosia Software apparently hates money, since they haven't produced any sequels in over a decade and haven't bothered to promote their existing properties through Steam or a similar content distribution service. I've seen a number of indie games rip elements from the series, but nobody has produced anything truly comparable.
