I'm push Cultural Revolution's deadline back a week. Now due Feb 20th.

You can swap to mercantilism as soon as you'd like. When foreign trade routes come however, you must swap to Mercantilism until state property, which you may then swap to, or keep Mercantilism.

um...hypothetically speaking..what happens if I find myself in the position where I capture Stonehenge? My gut tells me I should raze the city, Correct?

Well, it's a capital city, probably. You wouldn't want to raze it.

If you're close to Calendar, research it to make Stonehenge/Obelisks obsolete, then capture the city.

I've completed this. It turned out to be a very interesting variant play, a fascinating oppurtunity to think about the value of the various forbidden buildings.
