Try a richer map template on 160% and see how quickly you can snowball out of the starting zone

I have no clue which map templates are the richer ones, i usually just go with Random XL map.

Ah, I'm not sure if you can play the HotA templates without the mod installed, but I do know the templates come bundled with the mod. They're not exactly designed for playing against the AI, but you can definitely get fun games out of L+U templates like Mini-Nostalgia and Diamond. The map pack also comes with templates designed for multiplayer 200% difficulty games like Skirmish and Nine-Day Wonder, but I haven't played those myself.
Not a fan of underground included maps. ( i put it in with the monoliths as some of the only things i dislike about the game ) Ik, im picky

Yup. I was a little sad to find out most armies would look the same. Wyverns or Angels most of the time. HOTA adds more creature banks too I believe.
For example for Rampart, Grand Elves would be your main stack, with Centaurs split into 1-stacks to protect them. Later on you'd add a few Pegasi for their speed. Maybe Unicorns for battle, but that's about it. A lot of your money would be spent on running 8 heroes for chaining, to clear the map quicker. https://www.twitch.tv/theknownworld is a good channel to learn or just for entertainment. Learned how/why to do a shit load of 1stacks and NEVER trust the auto combat to not be a complete dumbass.
