I don't think the facts are in dispute here, it's just that people have different priorities. There's high player count, quick pace, and no double-move rules nightmares: pick two. You have the flexibility to switch between priorities with simultaneous Pitboss though. You can have a quick pace with many players for the early game, then (if necessary) ease up the pace when multiple wars start cropping up, due to the fact that the timer can be changed. But it seems usually that's not even necessary around here, because generally players are very respectful of when to move their units and will go out of their way to avoid double moving. In the one or two instances double moving happened in PB4 it was a minor issue, quickly recognised by the person as a "my bad" moment, then reverted with little delay.
Is Pitboss slightly more chaotic than PBEM in some circumstances (namely engaging in multi-front wars)? Sure, sometimes. Is it such a problem that it's worth forever limiting yourself to playing games with only a couple of players at a fraction of the speed? Not in the slightest.

Though I imagine figuring out war timers would be tricky too. I guess that could be partially fixed by having multiple continents rather than a single landmass (to limit the number of interactions early on). Although I get the feeling that with RB levels of diplomacy, limiting games to ~10 players overall is reasonably sensible too.

God the turn timer/double move stuff in PB 3 was awful. All I remember is my brain hurting trying to figure it out. Couldn't agree with you more kyan.
